通常经过卖鸡蛋糕的档口都会被它刚出炉的香气给迷住,今天不妨自己也动手做一做, 家里也能洋溢着鸡蛋糕出炉的香气!





110g plain flour / 普通面粉 110克
110g sugar / 白糖 110克
4 eggs (separated) / 蛋(蛋黄分开) 4粒
oil for greasing moulds / 抹油 少许

1. Sun the flour for a day and sieve 2 to 3 times.
把面粉放在阳光下晒一天后,过筛2-3次。

2. Combine sugar and egg white in a mixing bowl, using electric beater, beat at high speed until egg whites are stiff. Add in egg yolks and continues beating until batter thickens.
用电动搅拌器把白糖和蛋白打至发起,加入蛋黄,继续打至浓稠状。

3. Heat oven to 225℃, grease Kuih Bahulu mould and preheat mould in oven.
预热烤箱至225℃,放入模子预热。

4. Scoop 100g egg batter, in a bowl, gently fold in 4 tbsp sifted flour.
拿出100克的蛋糊,慢慢加入4汤匙面粉搅和。

5. Fill the pre-heated Kuih Bahulu mould ¾ full with batter and bake for 8-10 mins until golden brown.
在预热了的模子上倒入¾的面糊,烤8-10分钟至金黄色。

6. Remove Kuih Bahulu, re-grease mould before putting more batter. Repeat till all batter is used up.
从模子取出烤熟的蛋糕后,再抹油,重复烘烤的动作至面糊用完为止。
